How to Make Chipotle Veggie Stir-fry is the go-to recipe for something fresh with a spin. This is great if you want something filling but not too heavy. It will also go well as a side dish.
A chipotle is a dried, smoked jalapeno pepper with a spicy, smoky, sweet flavor. It is often canned in a vinegary sauce called adobo. This is an all-veggie stir-fry. You can choose any veggie you would like, but for this recipe, I am going to make it simple and get a bag a stir fry.
Serves 4
Ingredients
1 medium bag of stir fry veggies
2 tbsp olive oil
Chipotle Sauce
3 chipotles, canned in adobo sauce, or less
1 tbsp adobo sauce from canned chipotles
4 cloves garlic, peeled
2 oranges, peeled
1 lime, juiced
1 tbsp tomato paste
2 tbsp apple cider vinegar
1 tbsp extra virgin olive oil
2 tsp ground cumin
1 tsp Mexican oregano
1/2 tsp salt
1/2 tsp ground black pepper
Instructions
Heat wide pan with 2 tbsp of olive oil.
Add veggies and stir until tender.
Now remove from heat and set aside.
In a blender, add remaining ingredients including 1 tbsp olive oil and blend until smooth.
Now, transfer to a medium saucepan and bring to a boil while stirring.
Finally, remove from heat and pour onto stir-fry. Gently toss the stir-fry.
Now serve.
