How to Make Cream of Broccoli Soup is a recipe that is filled with a fresh taste. Although, it has healthy options, it is still flavorful. Just heat this soup and pair it with your choice of protein, a bread, or eat it alone. You can’t go wrong with any option.

Ingredients

2 tbsps. butter

1 tbsp olive oil

1 shallot peeled and chopped

1 russet potato diced

1 head of broccoli chopped

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp white pepper

2 chicken bouillon cubes

3/4 cup heavy cream

1/4 tsp ground nutmeg

Serves 4

Instructions

Heat butter and oil over medium heat in a medium pan.

Add shallot and stir until softened.

Add potato, water, 2 bouillon cube, and chicken stock.

Now, bring to a boil.

Once boiling, reduce to simmer and stir occasionally for 8 minutes.

Now, add the broccoli, salt, and peppers.

Stir and simmer for another 6 minutes or until broccoli and potatoes are tender.

Now, ladle into blender and add cream and nutmeg. Then, blend until smooth.

Return to heat to thicken. Stir.

Garnish as desired.

Now serve.
